Castillian Hot Chocolate

Ingredients
  • 55g / ½cup unsweetened cocoa powder
  • 200g / 1cup sugar
  • 7 tsp cornflour
  • 120ml / ½cup water
  • 1litre / 4cups milk
Method
  1. Mix the cocoa powder and sugar together.
  2. Dissolve the cornflour in the water and combine with the cocoa-sugar mixture in a medium-sized saucepan. Stir until it is a smooth paste.
  3. Begin heating the mixture, stirring continuously. Gradually pour in the milk, and continue to stir as you bring it to a simmer.
  4. Simmer, stirring often, for about 10 minutes. The hot chocolate is ready when it thickens and is glossy and smooth.
  5. Warning: This mix takes a long time to cool down, even in a mug. Take a small sip first to avoid burning your throat! (Trust me on this one.)
